1 cup plain flour
1 cup Urban Farm Goods kimchi
1 tsp sugar
½ tsp salt
1 tsp baking powder
¼ tsp bicarb soda
½ cup – 1 cup water (enough to make it loose)
Combine all ingredients with enough water to make a good pancake consistency
Heat pan to hot add 2tbs veg oil, place about ¼ cup of mixture in pan and cook until crisp, approximately 3-5 mins, flip and crisp other side 2-3 mins.
¼ tsp chopped garlic
¼ tsp chopped ginger
2x button mushrooms chopped in quarters
¼ cup mixed Asian greens or green veg, such as snow peas, broccolini & kale
Urban Farm Goods pickled radish
Heat a separate pan, add oil, ginger and garlic. Cook until fragrant.
Add mushrooms and lightly cook
Add veg and cook until just tender. Remove from pan.
Place pancake on plate, dress with kupi mayo. Place veg to onside of pancake and top with poached egg
Garnish with radish, togarashi and crispy shallots.
